Gluten & Dairy Free Banana Pancakes

I find it only appropriate that my first post in quite sometime be protein pancakes since I do have a slight obsession with pancakes :) Made these bad boys with just a few ingredients and they turned out moist and delicious!!!  

The nutrition on these are awesometastic! 30g of protein and 25g of carbohydrates with 6g of fiber.  Also a great source of potassium because we used a fresh banana!  Under 300 calories breakfast, lunch, or even dinner if you are like me and eat pancakes any time of day.


 

Ingredients:
- 1 scoop VPX Sports SRO Zero Carb Whey Protein (I used chocolate but they also have Vanilla, and a yummy Graham Cracker flavor you could use!)  If you can't find VPX Sports protein powder at your local nutrition shop you can purchase it online at www.vpxsports.com and use my code: CANDY20 for 20% off and free shipping!
- 1 Tbsp Organic Coconut Flour
- 1 Tbsp Chocolate PB2 (this is cocoa powdered peanut butter which is amazing)
- 1 Large Brown Organic Egg
- 75g Organic Banana (half is used in the batter, the other half is used as a topping)
- 1/4 Cup Unsweetened Vanilla Almond Milk
- 1/4 tsp Pure Vanilla Extract
- 1/8 tsp Gluten Free Baking Powder (Clabber Girl)
- Dash of Cinnamon (cause I put cinnamon in almost everything haha!)

Instructions:
- Blend all the ingredients in a blender (I use my Magic Bullet) except for half of the banana because you will use that as a filler and topping!
- Spray pan with non-stick cooking spray and heat on Low.
- Pour batter on to pan and cook for 2-3 minutes on each side, or until golden brown.
*Tip* When your pancakes begin to bubble, that is a good indicator they are ready to flip!
- Slice remaining banana and layer between protein pancakes.

I like to finish off my pancakes with sugar free pancake syrup such at Walden Farms or Maple Grove Farms.  You can do the same or top with fruit and/or peanut butter! #IIFYM

Spinach & Zucchini St. Patty's Day Protein Pancakes

Most people celebrate St. Patrick's Day by drinking green beer... 
I'd rather eat pancakes!  Lol!  
So, in honor of the Irish holiday I made some delicious and nutritious protein pancakes :)

Spinach & Zucchini St. Patty's Day Protein Pancakes


Ingredients:
- 1 scoop VPX SRO Whey Protein (I used chocolate)
- 1/2 small Zucchini (cut into slices)
- 1 cup Organic Spinach
- 1/4 cup Oats
- 3 tbsp Egg Whites
- 1 tbsp Organic Ground Golden Flax Seed
- 1/2 tsp Pure Vanilla Extract
- 1/4 tsp Ground Cinnamon
- 1/8 tsp Baking Soda

Ingredients:
- Coat pan with non-stick cooking spray or coconut oil.
- Mix all ingredients in food processor (or blender, or Magic Bullet, etc.) until smooth.
- Pour 1/3 of the batter onto pan and cook on Low heat until golden brown
(this should take about 2 minutes on each side).
*Tip* When the pancake begins to bubble that is a good indicator that you should flip!


This recipe makes 3 medium sized protein pancakes which equals 1 serving.
As a topping, I added 1/2 tbsp of Sunbutter (all natural sunflower spread) and 1/2 tbsp of Walden Farms Pancake Syrup.  You can choose to add whatever you like or whatever fits your macros.

Topping Suggestions:
- All Natural Unsalted Nuts or Seeds
- All Natural Nut Butter (Almond, Peanut, Sunflower)
- All Natural Organic Jam (Apple, Blueberry, Peach, etc.)
- Cottage Cheese
- Greek Yogurt
- Organic Fruit (Apples, Blueberries, Cranberries, Peaches, Pears, Strawberries, etc.)
- PB2

Nutritional Information:
(without topping)
238 calories, 4g fat, 308mg sodium, 193mg potassium,
21g carbohydrates (5g fiber, 1g sugar) 30g PROTEIN

Cinnamon Raisin Swirl Protein Pancakes

Maybe I should change my blog to Protein Pancake Paradise! Lol!  I know I post a lot of protein pancake recipes but I just can't help that I adore pancakes :) Any who, I woke up this morning with a huge hankering for something sweet!  Alone, my usual egg whites and oatmeal just wasn't going to satisfy my sweet tooth, but together with a couple added ingredients... they can make magic!  My goal was to meet my macros; I needed to get at least 25g of protein and 20g of carbohydrates in my system for my morning meal.  This recipe packs 31g of protein and 20g of carbohydrates.  Mission accomplished!

Cinnamon Raisin Swirl Protein Pancakes
Serves 1

Ingredients:
1) 1 scoop VPX SRO Zero Carb Chocolate Whey Protein
2) 15g Organic Oat Flour (I used Arrowhead Mills)
3) 1/4 cup Egg Whites
4) 1/8 cup Applesauce
5) 1/4 tsp Ground Cinnamon
6) 1 tbsp Peanut Butter & Co. - Cinnamon Raisin Swirl
 

Instructions:
- Mix the first 5 ingredients together until it is of pancake batter consistency. (The great thing about this recipe is that you don't even need a blender, you can just mix with a spoon!)
- Coat pan with non-stick cooking spray.
- Pour 1/2 of the batter onto pan and cook on Medium-Low heat until golden brown (this should take about 2 minutes on each side).
*Tip* When the pancake begins to bubble that is a good indicator that you should flip!
- Spread 1/2 tbsp of Cinnamon Raisin Swirl peanut butter onto each pancake.

Banana Coconut Protein Pancakes

Unfortunately for me I have been bitten by the flu bug and so I stayed home from work yesterday just bumming around the house.  Fortunately for you all, I can't sit still for long and of course I became hungry but my throat hurt :(  Then it hit me... warm, soft, and sweet... PROTEIN PANCAKES!!! I haven't made protein pancakes in quite some time so I just grabbed what sounded good to me and this is the result :)

Banana Coconut Protein Pancakes


Ingredients:
- 1 scoop of Vanilla Whey Protein Powder (I used VPX SRO)
- 1/2 cup Egg Whites
- 1/4 cup Organic Oats
- 1/2 small Banana
- 1/8 cup Unsweetened Vanilla Almond Milk
- 1 tbsp Organic Coconut Flour
- 1/8 tsp Cinnamon
- 1/8 tsp Baking Soda

Instructions:
- Blend all ingredients in a blender (I use my Magic Bullet) until mixture is of pancake batter consistency (this should take less than 30 seconds).
- Coat a non-stick pan with Organic Coconut Oil.
- Pour 1/3 of the mixture into pan and cook on Medium-Low heat for about 2 minutes on each side.

*Tip* When air bubbles form on top that is a good indicator that you should flip your protein pancake!

This recipe produces 3 medium sized protein pancakes which is one serving.

I topped my Banana Coconut Protein Pancakes with a tbsp of Walden Farms Syrup because they were perfect on their own, but if you'd like some options, below I have listed healthy topping suggestions :)

My Topping Suggestions:
- Fresh Fruit; Banana, Blueberries, Strawberries, etc.
- All Natural, Unsalted Nuts; Almonds, Walnuts, etc.
- All Natural Organic Nut Butter; Almond Butter, Peanut Butter, Sun Butter, etc.
- Organic Coconut Flakes

Nutritional Information:
295 calories, 2.8g fat, 383mg sodium, 515mg potassium, 31g carbohydrates (6g fiber, 6g sugar), 36.2g protein.

Chocolate Chip Protein Pancakes

I really don't think I need to say much, the recipe speaks for itself.

It's AMAZEBALLZ!

Chocolate Chip Protein Pancakes

Ingredients:
- 2 scoops Vanilla Whey Protein
- 30g Organic Oat Flour (I used Arrowhead Mills)
- 6 tbsp Liquid Egg Whites
- 1/8 cup Plain Greek Yogurt
- 1 Banana, mashed
- 1/4 tsp Pumpkin Pie Spice
- 1/4 tsp Pure Vanilla Extract
- 1/4 tsp Baking Soda

Toppings:
- 1 tbsp Dark Chocolate Chips
- 2 tbsp Walden Farms Pancake Syrup
- 1 tbsp Light Cool Whip  

Instructions:
- Combine the ingredients in a medium mixing bowl (I like to use one with a spout so it's easier to pour the pancakes).
*Tip* Use a ripe, more brown than green banana.  They are sweeter, softer, and easier to mash (you want to make sure you mash the banana very well so you don't have any chunks in your batter).  Also, research has shown  that the darker patches it has, the higher the immunity enhancement quality.
- Spray pan with non-stick cooking spray and heat on Medium-Low.
- Pour batter into pan and sprinkle 1/2 tbsp dark chocolate chips onto each pancake.
- Cook for 2-3 minutes on each side, or until golden brown. 
- Top pancakes with Walden Farms Pancake Syrup and a dollop of Light Cool Whip. 

*This recipe makes 2 servings*
Serving Size = 2 large pancakes

Cinnamon Chocolate Protein Pancakes with PB & Banana Topping

If you follow me on any of the social media networks (which I suggest you should) ;) You probably know by now I'm all about pursing progress.  Personally, I feel as if there is always room for improvement when it comes to almost anything in life.  I'm striving to be the best me I can possibly be, persistently trying to better myself every day.

This is relative to my cooking as well.  I'm constantly questioning; How can I make this recipe healthier? Can I substitute any ingredients to make this meal a clean eating choice? Is it possible to reduce the calorie content? What can I do to make this recipe even more delicious?  I can go on and on, but I think you get the point! Lol!

So, in seeking to make my protein pancakes even better, I came up with this wonderful recipe!  Cinnamon Chocolate Protein Pancakes with PB & Banana Topping!

Cinnamon Chocolate Protein Pancakes with PB & Banana Topping

Ingredients:
- 1 scoop Chocolate Whey Protein (VPX SRO Zero Carb)
- 1/4 cup Quick Cooking Oatmeal
- 1/4 cup Egg Whites
- 1/8 cup Fat Free Cottage Cheese
- 1/8 cup Unsweetened Applesauce
- 1/2 tsp Cinnamon
- 1/2 tsp Vanilla Extract

Topping:
- 1 tbsp Natural Peanut Butter
- 1/2 Banana (sliced)

Instructions:
1) Blend all ingredients together (I use my Magic Bullet).
2) Cook pancakes on Low heat on a pan sprayed with non-stick cooking spray.
3) Spread half tbsp Natural PB on first pancake while warm.
4) Place second pancake on top and spread remaining Natural PB on top.
5) Top with Banana slices.

Serving Size: 2 medium sized Protein Pancakes
Nutrition (includes the topping!): 370 calories, 33g protein, 9g fat, 282.5mg sodium, 36g carbs, 6g fiber

These came out great!  They were thicker and much more moist than the original recipe.  I really like the addition of cinnamon as it boosts metabolic rate and flavor.  Also, I'm very happy I was able to reduce the calories from 467 to 370!  Tastier and healthier for the win!

Cloud 9 Cakes

I often get asked what brand of protein powder I use in my recipes, well, here it is!
VPX SRO Zero Carb
I love using this protein powder in my recipes because it's only 80 calories per scoop, packed with 20 grams of protein and ZERO carbs!  Also, it tastes great ;)

Now, on to some simple clean cooking!

I have been trying to figure out different ways to use the ever so fabulous PB2 and so far I haven't had much success... until now!  Woo hoo!  

If at first you don't succeed... try, try, again!  

With hints of chocolate, vanilla, peanut butter, and cinnamon, these protein pancakes were SO scrumptious.  They remind me of fluffy clouds and everyone thought they looked like a cake, hence, Cloud 9 Cakes :)  I was pleasantly surprised with the texture, they came out incredibly moist.  And as far as taste goes, I'm glad I kept trying cause these cakes are heavenly!



Cloud 9 Cakes

Ingredients:
- 1 scoop SRO Zero Carb Chocolate Protein Powder
- 1/4 cup Quick Cooking Oats
- 1/4 cup Fat Free Cottage Cheese
- 1/4 cup Egg Whites
- 1/8 cup Unsweetened Applesauce
- 1/2 tablespoon PB2 Powdered Peanut Butter
- 1/2 teaspoon Cinnamon
- 1/2 teaspoon Vanilla Extract
- 1/2 packet Stevia Pure Via

Topping:
- 1/2 cup All Natural Fage Greek Yogurt
- 1/2 packet Stevia Pure Via
- 1/8 cup Cocoa Almonds

Instructions:
- Blend all of the ingredients together (I use my handy dandy Magic Bullet).
- Cook pancakes on Low heat on a pan sprayed with non-stick cooking spray.
- In the meantime, mix Greek Yogurt and Stevia together.
- Spread half of the topping in between cakes and the other half on top.
- Place Almonds on top.

Easy!
