High Protein French Toast



First of all, I would like to say thank you to my swolesista Rachel Bielmeier for introducing me to this awesome bread by Pepperidge Farm which is just 45 calories per slice!  It's low fat, a good source of fiber, cholesterol free, and made with whole whole grains.

Secondly, let's get down to business!  I really wanted french toast this morning so... I made it!  But, I wanted more protein so what did I do?  I used my VPX Sports Zero Carb Whey Protein Powder! You can use my discount code: CANDY20 for 20% off of your order and Free Shipping.

Ingredients:
- 2 slices of Soft Wheat Bread
- 2 Egg Whites
- 1/3 scoop VPX SRO Whey Protein Powder (I used Vanilla)
- Dash of Apple Pie Spice
- Splash of Vanilla Extract
- Splash of Unsweetened Vanilla Almond Milk

Toppings:
- Banana Slices
- Walden Farms Pancake Syrup
- Fat Free Redi Whip

Side:
- 2 slices of Jennie-O Turkey Bacon













Instructions:
- Whisk all of the ingredients together in a bowl and soak bread slices in mixture.
- Cook each side of the bread in a sprayed or greased pan on medium-high until golden brown.
- While the french toast is cooking in the pan I cooked my bacon in the microwave for about 2 minutes.
- When the french toast is done, place on a plate and add toppings.
- Enjoy!

In total, this took about 10 minutes to make and it is all less than 250 calories! :)

Gluten & Dairy Free Banana Pancakes

I find it only appropriate that my first post in quite sometime be protein pancakes since I do have a slight obsession with pancakes :) Made these bad boys with just a few ingredients and they turned out moist and delicious!!!  

The nutrition on these are awesometastic! 30g of protein and 25g of carbohydrates with 6g of fiber.  Also a great source of potassium because we used a fresh banana!  Under 300 calories breakfast, lunch, or even dinner if you are like me and eat pancakes any time of day.


 

Ingredients:
- 1 scoop VPX Sports SRO Zero Carb Whey Protein (I used chocolate but they also have Vanilla, and a yummy Graham Cracker flavor you could use!)  If you can't find VPX Sports protein powder at your local nutrition shop you can purchase it online at www.vpxsports.com and use my code: CANDY20 for 20% off and free shipping!
- 1 Tbsp Organic Coconut Flour
- 1 Tbsp Chocolate PB2 (this is cocoa powdered peanut butter which is amazing)
- 1 Large Brown Organic Egg
- 75g Organic Banana (half is used in the batter, the other half is used as a topping)
- 1/4 Cup Unsweetened Vanilla Almond Milk
- 1/4 tsp Pure Vanilla Extract
- 1/8 tsp Gluten Free Baking Powder (Clabber Girl)
- Dash of Cinnamon (cause I put cinnamon in almost everything haha!)

Instructions:
- Blend all the ingredients in a blender (I use my Magic Bullet) except for half of the banana because you will use that as a filler and topping!
- Spray pan with non-stick cooking spray and heat on Low.
- Pour batter on to pan and cook for 2-3 minutes on each side, or until golden brown.
*Tip* When your pancakes begin to bubble, that is a good indicator they are ready to flip!
- Slice remaining banana and layer between protein pancakes.

I like to finish off my pancakes with sugar free pancake syrup such at Walden Farms or Maple Grove Farms.  You can do the same or top with fruit and/or peanut butter! #IIFYM

Chicken & Vegetable Frittata


Chicken & Vegetable Frittata
This is a wonderful breakfast bake that you can make in the morning or even ahead of time.  It’s so simple!  I just threw in whatever vegetables I had available, added pre-cooked chicken breast (I always have chicken breast cooked and ready to be eaten!), and poured liquid egg whites over top.  This is a delicious and nutritious LOW CALORIE, LOW CARB, LOW SUGAR, and PACKED WITH PROTEIN breakfast or even snack (in fact, I took my leftovers to work).   
Also, it’s gluten-free and Paleo friendly :) 

Ingredients:
- 1 cup Yellow Squash, sliced
- 3 ounces Asparagus Spears, diced
- 2 cups Organic Baby Spinach (I shredded with my hands)
- 75 grams Cherry Tomatoes (I cut into three sections)
- 4 ounces Organic Chicken Breast, cooked and diced
- 2 cups Liquid Egg Whites
- Mrs. Dash Original Seasoning Blend


Instructions: 
- Preheat oven to 350 F.
- Fill glass baking pan with veggies and chicken.
- Sprinkle Mrs. Dash Original Seasoning on top.
- Pour liquid egg whites over chicken and vegetables.
- Bake in the oven at 350 F for 30-40 minutes or until golden brown on top.


*Note*
You can sprinkle shredded cheese on top for the final 5 minutes if you’d like, 
but then it won’t be Paleo approved ;)


Tip:  Add whatever vegetables you have on hand!  Broccoli, zucchini, egg plant, peppers, onions, kale, etc.  Basically, whatever fits your macros and your taste buds!

Cookies & Cream Proats

I'd love to share this super simple proatmeal recipe with you guys!  I make some form of oats almost every morning and this is one of my favorites :)  It takes only 3 ingredients and 3 minutes to make this delicious dish so there really is no excuse for you not to eat a healthy and hearty breakfast!


Cookies & Cream Proats

Ingredients:
- 1/3 cup Quick Oats
- 1/4 tsp Ground Cinnamon
- 2 ounces VPX Cookies & Cream Protein Rush

Instructions:
- Pour quick oats into a microwave safe bowl.
- Add ground cinnamon.
- Mix with as much water as you please to reach your desired consistency.
- Microwave for 1 minute and 30 seconds.
- Carefully remove dish from microwave (Caution: It's hot!)
- Stir in VPX Cookies & Cream Protein Rush.

If you'd like to add any additional ingredients be my guest, the sky is the limit!
